Our Story

Chef Alex Dayton

TheDough Room is possible only because of the heart of Alex Dayton. He is not only a renowned chef, he is an artist. The passion that drew him to the kitchen as a young boy has that same wonderful essence that keeps him creating exquisite meals for his patrons to this day.  

It will be clear, once you are enjoying his handcrafted pasta, that Alex was born to be a chef. Like many greats before him, the route to his passion for TheDough Room started when he was a child. There’s always one of them in the group--the one who wakes early during sleepovers and is first in the kitchen. But Alex was drawn to the art of foods he could control and create and present. He wasn’t about merely pouring cereal in a bowl. Alex would wake early, head to the kitchen, stir together a pancake mix and have hot cakes ready for his friends when they rolled out of their sleeping bags. 

After high school, without even considering that a chef could be a career, Alex tried several different job paths, but nothing left him fulfilled. During a summer job in Florida cooking the dinner shift at a resort, Alex could no longer ignore his passion. He loved the job, he loved working the kitchen, he loved the energy and the food and the work. After resort season was over he immediately applied to culinary school in Minnesota. 

During his education Alex worked as a line cook opening Cocina del Barrio after which the restaurants became his teacher. Alex helped open Butcher and the Boar, The Kenwood and Borough before he branched away from Minneapolis to the food scene of San Francisco. It was there he had the fortune to work at the Michelin star-rated restaurant Benu and the James Beard award-winning restaurant Flour +Water.  

EventuallyMinnesota’s community of good people who like good food drew him back. He got married and started working and studying food with Peter Campbell at Red WagonPizza before launching Tenant as their resident pasta guy. 

And this brings us to Chef Alex and The Dough Room. He discovered through his restaurant travels that his love for making fresh dough for pastas and pizzas is his favorite way to create food for you. The Dough Room is his passion. Each day Chef Alex is fulfilling his dream by preparing and presenting beautiful, nourishing food. Both his passions and his fare are exquisite yet simple.
