We Roll Dough

Chef Alex has perfected the art of pasta and pizza creation by hand rolling the combination of the simplest of ingredients to produce exquisite dishes. His acumen with food artistry is due, in part, to the experiences as Chef de Cuisine and various kitchen roles at renowned restaurants like Benu, Monsieur Benjamin and Flour + Water in San Francisco. Local restaurant connoisseurs will appreciate Chef Alex having a hand in opening Butcher and the Boar, Cocina del Barrio, The Kenwood and Borough. Beloved local restaurants Red Wagon Pizza, Sea Change and Tenant can claim his presence in their kitchens, too. Come over for dinner, Alex is rolling dough and he can’t wait to nourish you.

PASTA

The Dough Room handcrafts each pasta variety onsite with select local ingredients. Our versatile pasta profiles are created with elevated attention to detail. Growing up, Chef Alex always felt he was a craftsman at heart and now, as a food artist, he creates pasta by hand and gets to plate his beautiful masterpieces made especially for you. Since each ingredient and process at The Dough Room is completed with intention, the result is a peak food experience.

PIZZA

All the dough at The Dough Room starts with flour from Sunrise Flour Mill--our exclusive provider of the 1800s heritage red wheat flour to which Chef Alex is devoted. It allows chefs to create pasta and pizza with less gluten than traditional flours but with an unprecedented depth of flavor which tastes smooth with a touch of nuttiness. Our array of pizzas includes the salumi showcasing a red sauce topped with soppressata, peperoncini, green olives and red onion.

The Dough Room is committed to nourishing the Wayzata community with beloved foods in a space charged with calm, welcoming energy. Our commitment to good food extends to our food sources: the majority of the meat from Peterson Craftsman Meats, heritage red wheat from Sunrise Flour Mill, eggs from JRS Country Acres and as many local fruits and vegetables as is seasonally possible.
